Scones are a classic British baked good—crumbly, buttery, and versatile. Here’s a simple recipe for light, flaky scones.
Ingredients (8 scones):
- 2 cups all-purpose flour
- 3 tbsp sugar
- 1 tbsp baking powder
- ½ tsp salt
- ½ cup cold butter (cubed)
- ¾ cup heavy cream (plus more for brushing)
- ½ cup mix-ins: raisins, blueberries, or chocolate chips
Instructions:
- Preheat oven to 400°F (200°C). Line a baking sheet with parchment.
- Whisk flour, sugar, baking powder, and salt in a bowl. Cut in cold butter with a fork until mixture resembles coarse crumbs.
- Stir in cream until just combined, then fold in mix-ins. Pat dough into a 1-inch thick circle.
- Cut into 8 wedges. Place on the sheet, brush tops with cream.
- Bake 15-18 mins until golden. Serve warm with jam and clotted cream for a traditional treat.
