A savory twist on classic muffins, these onion-infused treats capture the bold flavor of New York Style Onion Bread in portable form.


Ingredients (12 muffins):


  • 2 cups all-purpose flour
  • 1 tbsp baking powder
  • ½ tsp salt
  • ¼ tsp black pepper
  • 2 large eggs
  • 1 cup buttermilk
  • ¼ cup olive oil
  • 2 tbsp melted butter
  • 2 cups caramelized onions (sautéed in butter until golden)


Instructions:


  1. Preheat oven to 425°F (220°C). Line a muffin tin with liners.
  2. Whisk flour, baking powder, salt, and pepper in a bowl.
  3. In another bowl, beat eggs, then mix in buttermilk, oil, and melted butter. Stir in caramelized onions.
  4. Fold wet ingredients into dry until just combined (don’t overmix).
  5. Fill muffin cups ¾ full. Bake 18-20 mins until golden.
